Ever since my friend Jeffrey introduced me to the wonders of this pizza spaghetti squash casserole last year, I wanted to expand my spaghetti squash repertoire. From the same paleo blog as the other casserole, I discovered this recipe for Buffalo Chicken Casserole.
It was tangy and spicy and delicious---while tasting pretty similar to Buffalo wings. Nothing can replace the fried goodness of wings but this is a healthier alternative.

And I can see this recipe entering my rotation of regular recipes alongside its brother: the pizza spaghetti squash casserole!
Buffalo Chicken Casserole

  • you can cook the squash ahead of time. i like to cook it whole since it's pretty scary to cut into a large squash when you don't have a lot of arm muscles. (Pierce squash all over with a fork. Place spaghetti squash whole onto a baking sheet and place in a 400 degree oven. Roast for an hour or until it can be pierced with a fork easily. Slice in half and remove seeds and stringy flesh. Then use a fork and scrap squash threads into a large bowl).
  • you can substitute ground turkey for ground chicken
