It's been about a year since I've come into possession of a pie plate but I've only used it as a vessel to house other things. I can now finally say that I've christened it with a proper pie the other day by making a super delicious savory pie.
To be honest, I'm not sure why I was intimidated to bake pies. I've made several galettes in the past but maybe was a little unsure of blind baking crusts and pie weights, etc. However, with Melissa Clark's thorough instructions, I think I was pretty successful in my first attempt.
The Recipe: Corn, Bacon and Cheddar Pie with Jalapenos from NY Times Cooking. It's in the same family as a quiche and super flavorful (with a spicy punch from the pickled jalapenos).
