Quinoa Breakfast Bowl

My favorite coffee shop in my neighborhood offers this really delicious, savory breakfast grain bowl packed with so much flavor and textures. 
Known as the Gillham Bowl, the menu lists its ingredients as quinoa, lemon vinaigrette, cilantro, lime sour cream, black beans, pepitas, pickled onion and a poached egg. I decided on tweaking a few things and think this version below is a close relative of the original. 
To assemble this quickly in the morning, have cooked quinoa, black beans and this vinaigrette at the ready in your fridge and just poach/fry an egg while you heat up the quinoa and beans. 

Quinoa Breakfast Bowl serves 1
Ingredients: 
1/2 cup cooked quinoa
1/4 cup cooked black beans 
1 fried/poached egg
toasted pepitas (pumpkin seeds)
dollop of Greek yogurt 
Directions: 
1. Combine all the ingredients and enjoy! (This could also be great with roasted broccoli, sautéed greens and avocado). 
2. Enjoy!
