Summer Salads

During the warmer summer months, there is nothing I enjoy more than noshing on a good deli salad. I used to love grabbing a to-go container at Whole Foods and scooping up a variety of their salad bar salads to enjoy as a meal. (Although I learned the hard way not to pick too many heavy weighted salads because I was surprised a few times with a hefty price tag). 

I brought the salad bar home to my kitchen by making these refreshing salads during this hot, sticky KC summer. And to make them extra special, most of the produce came from my local farmers market. 

Fennel and Kohlrabi Salad from Brooklyn Supper is a lightly dressed and bright salad. I balanced the anise-y flavor of fennel by adding parmesan (not listed in the recipe), which provided a lovely nutty and salty punch. 

Tangy Potato Salad with Celery and Mustard from Alison Roman makes for the perfect picnic/potluck salad since there is no mayo in this recipe. The celery adds a perfect crunchy texture to this delightful, elevated potato salad. 


Cucumbers with Red Onion and Sesame from Alison Roman is the second of the Alison Roman salads I made recently from her episode of Home Movies that came out right before Fourth of July. This salad has an Asian twist with the addition of sesame oil and is super easy to make. 


Miso Vegan Kale Caesar Salad from Epicurious is an umami-packed take on caesar salad. Miso, tahini and rice vinegar bring so much flavor to this Asian-style, plant-based caesar salad.
