Meatless Indian Food Party

In my many hours of watching the Bon Appetit Channel in the past year, I have probably watched this video of Priya making the cutest and most appetizing-looking open-faced Indian sandwiches about ten times. She cheerily exclaimed that these were perfect for entertaining since they are simple to make. So for my first real big hang with friends at my new house, I decided to make these perfect party sandwiches. 
She describes them as a vegetable sloppy joe but with Indian flavors. This dish comes together quickly since most of the cooking is done by simply boiling things so your pot does most of the heavy lifting. 
The Recipe: Pav Bhaji from Priya Krishna of Bon Appetit. It's pretty heavy on the turmeric, which lends to a bitter flavor so I would use less if yours is fairly pungent (like mine). Also don't skip out on the onions and lime juice topping, it balances nicely with the spices in the potato mixture. Pickled onions would even make this dish sing more! 

And a wonderful complement to these sandwiches was this recipe for Chana Masala Cheese Fries. They aren't from another Priya recipe but it does remind me of her Indian-ish Nachos that I fell in love with last year. Actually either of them paired with the sandwiches would be perfect, or perhaps both?!
