I don't have a Tik Tok but occasionally I'll find out the latest recipe craze via the newsletters I get from The Kitchn. Ever since I saw this recipe for Pepper and Cucumber Salad a few months ago, I've been eating it nonstop this spring/summer.
It's a little spicy, bright, crunchy and packed with so much flavor---plus it's super simple to make.
Sweet Pepper and Cucumber Salad adapted from rachael kirkconnell
Ingredients:
2-3 Persian cucumbers
5-7 mini sweet peppers
1/2-1 tbs chili crisp/oil
Everything Bagel Seasoning/ Furikake
1 tbs sesame oil
1 tbs canola oil
1 tbs low sodium soy sauce
2 tbs rice wine vinegar
1 garlic clove, grated
1/2 inch knob of ginger, grated
Directions:
1. Chop cucumbers and peppers into 1/4 inch slices.
2. Mix together ingredients for sesame ginger dressing.
3. Combine veggies, dressing, chili crisp in a large bowl.
4. Sprinkle everything bagel seasoning or furikake over top.
5. Enjoy!
