For the past three years, I've been baking the husband a flourless chocolate cake for his birthday. Flourless cakes are a great way to have gluten-free baked treats without having to buy special gluten-free flour (while he isn't gluten free, he has gluten free people in his life).
This year I decided to bake flourless cupcakes so I didn't have to slice up any cake to share at the pizza birthday party (less mess and already pre-portioned).

The Results: Flourless chocolate cakes are rich and these cupcakes had a real punch of chocolately flavor that was very intense. While I couldn't bring ice cream (to help curb the richness) to my hubby's pizza party at his favorite childhood pizza place, I decided the richness could be cut through with a buttercream frosting (now in hindsight, a whipped cream topping would have been better).
The frosting helped some but the cupcakes in mini form were the perfect size for a rich cupcake. I baked both regular sized and mini cupcakes and much preferred the minis. Definitely would recommend these without frosting and topped with plain, vanilla ice cream.
Overall, a decent gluten-free dessert and my first baked cupcakes in years! Just be aware that flourless chocolate cakes are more crumbly so I might go back to baking flourless cakes in cake form so a fork could help with all the crumbly-ness.
