With the new year, I thought I'd explore
chia seeds since they seem to be all the rage these days. Chia seeds are super nutritious: they're high in protein, omega-3 fatty acid, calcium and other vitamins. And they're neutral in taste so they won't taint up your food with a weird, super healthy flavor.
My first chia experience was with some
chocolate pudding. Since I suffer from
trypophobia, I chose a chocolate pudding so I didn't actually have to see the chia seeds clearly visible in the pudding.
This chocolate pudding recipe is different from other recipes I browsed at since it uses coconut milk, which I normally have in my pantry (most others called for
almond milk but
I just read that any kind of milk will suffice).
When combined with a liquid, the chia seeds turn into a gelatinous texture, which is similar to tapioca pudding.
This dessert is no Jello Pudding Cup but it was pretty tasty. Top with fruit, nuts or whipped cream or add in your favorite extract (I put in a splash of vanilla) and get your daily dose of nutrition.
