Super Juice

Last week I took a little break from Buffalo and headed to Chicago to visit the family and attend my friend's wedding (congrats, Sunny & Paul!). The best thing about being home: I get fed every meal without worrying about cooking.

Recently, my mom was persuaded by a tv commercial to buy one of those bullet juice machines. I think it was also because the sistas and I have been harping the parents about how they barely eat any vegetables besides cabbage from kimchi. Anyway, every morning I was home, I was fed a lovely, nutritious, fresh juice (and also my favorite: a soft-boiled egg).
Mom's Morning Juice combines leafy greens (kale or spinach), fresh berries, bananas, chia seeds, goji berries, almonds and some water. It all gets blasted in her fancy blender and voilá, a nutritious green juice.
So in honor of my mom, I made a less fancy version of her juice with my immersion blender. It was definitely not as juice-like as hers, I suppose more of a smoothie. If you have an immersion blender or a regular one, make yourself a nutritious morning treat!

Healthy Morning Smoothie
Ingredients:
a handful of greens (spinach/baby kale)
a 1/4 cup frozen berries
1/2 banana
1 tbs chia seeds
a splash of milk
1/4 cup plain yogurt (greek works too)
optional: almonds, walnuts, ground flax seed, goji berries, other fruit, etc
Directions:
1. Place all ingredients in a tall measuring cup and blend until smooth.
2. Enjoy!
