Cheesy Breakfast

My love affair with savory breakfast foods is still going strong and these cheesy breakfast beans are a true winner in my eyes.
And if you add an egg on top of anything, it'll make for a delicious start to the day. 
Cheesy Breakfast Beans for One adapted from Serious Eats
Ingredients:
1 tbs olive oil 
1 garlic clove, minced or grated on a micro plane
1/2 (15 oz.) can of white beans, drained and rinsed (cannellini or great northern) 
2 tbs milk or heavy cream
2 tbs water 
1 small handful of grated cheddar cheese
1 tbs parmesan cheese

1 tbs olive oil 
1 cup chopped kale or other leafy green 
1 tsp lemon juice
1 egg 
1 scallion, chopped 

Directions:
1. In a small saucepan, add tablespoon of oil over medium heat. Once the oil has become shimmery, add in minced garlic and let sit for 30 seconds. Then add in beans, milk and water; bring to a simmer. Then mash beans with a potato masher or even a whisk, until desired consistency is reached. Add more water if too thick. Add in cheddar and parmesan cheeses and stir. Remove saucepan from heat and set aside.
2. In a frying pan over medium heat, add in olive oil, until shimmering. Add in chopped kale and sauté until wilted. Remove kale from heat into a bowl and toss with lemon juice.
3. Return to frying pan and add in additional olive oil. Crack an egg into pan and cook until whites become opaque.
4. In a bowl, add in mashed beans, top with kale and scallions and finish by placing the fried egg on top.
5. Enjoy!
