Kimchi + Spam

One of the things I love about Korean food is that food is repurposed to cut down on waste. Have old, sour kimchi? Make a delicious, spicy stew out of it!
Sometimes it's hard for me to finish an entire jar of kimchi by myself before it gets too fermenty and not so crunchy. But when that happens, I make sure I have a can of spam on hand to make kimchi jjigae, aka kimchi stew. It's super simple and ready in almost no time.

Basically, just throw all the ingredients into a pot and let it boil and simmer for a bit...and poof, dinner is served! 
Spam Kimchi Jjigae adapted from Aeri's Kitchen
Ingredients:
2 cups kimchi with juices (can chop into smaller pieces if you want)
1/2 can spam, cubed
1/2 package of tofu, sliced into rectangles
2 1/2 cups chicken broth or water
1 garlic clove, minced
2-3 green onions, chopped
Directions:
1. Place all ingredients in a pot and stir. Bring to a boil and then lower heat and let simmer for 20-25 minutes.
2. Serve over rice and enjoy!
