Fall-Spiced Goodies

As someone who loves Summer, Fall can somewhat be a hard transition---shorter days, cooler weather, the farewell to summer clothes. But the upside is that Fall brings the abundance of fall baking flavors like cinnamon, nutmeg and cloves. 

The following three recipes helped use up leftover pumpkin (the two recipes equal exactly the amount in a can) and a bag of cinnamon chips so these could be made in succession. 

Pumpkin Cake Doughnuts from King Arthur Baking is an annual favorite. These are adorably cute since I use a mini doughnut pan and they're always perfectly delicious. 

Cinnamon Chip Pumpkin Cookies from Sally's Baking Addiction might be my new favorite pumpkin cookie. I purchased cinnamon chips for apple scones and these work so much better than chocolate chips in pumpkin cookies. Perfectly chewy and with the perfect punch of spice. 

Apple Cinnamon Scones from King Arthur Baking were a tasty way to use more apples that I had picked while apple picking a month ago. (I even made my own applesauce for this recipe). These were not too sweet and packed with warm and fuzzy spices that scream FALL IS HERE. I don't know what I've been doing without cinnamon chips in my life all these years but they have been a delightful addition to fall baking this year.
