Pudding Time

This weekend I was looking for a no-bake/make ahead dessert and Alison Roman's most recent video about Coconut Banana Cream Pudding couldn't have come at a better time. I love Nilla wafers and banana desserts so this seemed all too perfect to make. 
And this recipe was all too delicious! Not too sweet, a good balance of the coconut and banana flavors and a creamy, delightful dessert. Plus I love how the Nilla wafers soften to create an almost cake-like texture. 
The Recipe: Coconut Banana Cream Pudding from Alison Roman. In the video, she changes the order the pudding should be assembled in order to avoid cream and pudding layers being one after the other. So if you have her book Nothing Fancy, make a note of the revised order but the link above will have her new suggestion of the perfect assembly. 
Recipe Notes: 
  • The coconut milk is subtle but if you aren't a fan of coconut, then substitute regular whole milk instead. 
  • I also halved the recipe by weighing out her original measurements then dividing them by half to be accurate. It still made a TON OF PUDDING. So find some friends to share this with---it's the perfect dessert to share with a crowd. 
  • I just realized why mine wasn't too sweet---I forgot to add confectioner's sugar to the whipped cream. I didn't even miss it so you can follow my lead if you'd like.
