Birthday Bundt

October 26, 2021

As it has been tradition for the last few years, I baked myself a birthday cake but this year, it was in bundt form. I was gifted my bundt pan ten years ago and to celebrate a decade with one of my favorite baking vessels, it seemed so fitting that it bake my birthday cake this year.

But in all honesty, I was almost not going to bake out of sheer laziness but a bundt is kind of the lazy man's cake anyway so it was really perfect that I turned to the bundt. And I had bookmarked a Yossy Arefi Pumpkin Bundt Cake Recipe last month and couldn't wait to bake it (I love all her recipes).

This cake was perfection! Perfectly moist, flavorful (with the perfect blend of spices), not too sweet and a wonderful cake to share with friends who helped me celebrate my birthday.
The Recipe: Pumpkin Bundt Cake with Maple-Brown Butter Glaze from Yossy Arefi and NYTimes Cooking (but I found a link to a non-paywall version).

Recipe Notes: I didn't have sour cream on hand and I'm happy to report that it worked well with full-fat Greek yogurt. And mine baked in about 50 minutes (5 mins less that the printed time) in my oven that said it was at 350 degrees.
