Taco Night Sides

One of my favorite meals to make for friends is a Taco Night, since it's relatively easy to throw together. 

The menu usually includes: 
The first two items on the list are pre-seasoned meats so they just need to be heated and cooked through. This gives me time to focus on making the sides: guac, rice and elote salad. 

Restaurant-Style Mexican Rice from The Kitchn is that tomato-y, orange-colored rice that accompanies your entrees at Mexican restaurants. I love rice in all of its forms so this is always welcomed with open arms with my tacos. 

Elote Salad from Serious Eats is a less messy way to eat elote since it's off the cob. I like sprinkling this salad with Everything but the Elote seasoning from Trader Joe's, which gives it an extra pop of smokiness and heat. 

Chipotle-Style Guacamole has always been my favorite guac so when a friend who used to work at Chipotle told me how to make it, I've been able to enjoy it at home too! I've used white onion and lemon juice (instead of red onion and lime juice) and it still was delicious.
