For my first holiday cookie of the season, I turned to a simple yet festive-looking cookie: Peppermint Chocolate Chip Cookies. These cookies combine two things I love: Christmas and Chocolate Chip Cookies!
These cookies were perfectly soft and filled with mint chocolately goodness. And they were a good morale booster in a weekend filled with performing endless concerts.
The Recipe: Peppermint Chocolate Chip Cookies from Two Peas & Their Pod. I used a combination of a chopped up bar of Trader Joe's Candy Cane Joe Joe's (even though the recipe called for peppermint bark), peppermint baking chips and regular chocolate chips. I also used the pan banging method to create beautiful rippled edges on the cookies.
