For lazy meals at home, I've been grabbing salad kits at the grocery store lately. My favorite being any kale salad one that includes a broccoli/cabbage mix for added crunch, pepitas and a creamy poppy seed dressing (I usually never use the pouch with dried fruit). But these kits only contain maybe 2 servings that aren't very meal-worthy. I thought it'd be fun to create my own salad kit salad aka something fancier than a basic vinaigrette salad.
These salad-kit knockoffs I've been making have been equally as delicious but sadly aren't as quick as opening a bag and voila, having an instant meal. Assembly, however, doesn't take super long so it is still a quick meal to make.
Salad Necessities:
- crunchy mix of greens (cabbage, shaved brussels sprouts, broccoli)
- creamy dressing that feels indulgent but is actually healthy
- crunchy topping of nuts with an optional cheese topping
- extras: medium-boiled egg, avocado, roasted veggies like sweet potato/broccoli/cauliflower, pickled onions
Assembling the Homemade Salad Kit Salad:
- start with either chopping a mix of cabbage, brussels, kale or buy this bag of greens from Trader Joe's that contains all my favorites and makes 3-4 generously big salads.
- I've been trying many tahini dressings since they add a creamy texture without being unhealthy. My current favorites are Creamy Tahini Dressing, Tahini Caesar Dressing, Miso Tahini Caesar Dressing.
- top with protein/veggies/nuts/seeds/pickled things/fruit/grains
