I've been continuing my bean journey with bean salads for the summery, hot months. 2024 has become the Year of Beans in my kitchen. Luckily my housemate/partner/fiance has been very open to this dietary change in our kitchen so we have been embarking on this path together.
Moving on from brothy beans, I was on the hunt for new bean recipes. Where better to look than the cookbook written by the purveyor of my heirloom beans: Heirloom Beans by Steve Sando and Vanessa Barrington.
The Recipe: Christmas Lima Beans and Quinoa with Beets and Avocado from Rancho Gordo's Heirloom Beans was a perfect way to combine several of my favorite ingredients: quinoa, beets and avocado. The dressing was bright to help with the earthiness of the beets and beans. An additional shake or two of my favorite hot sauce added to this pleasant summer salad.
