Pumpkin Baked Goodies

While my driveway and yard are completely covered in leaves, the weather is still in the 80s here in KC (and I'm not complaining). As someone who prefers sunny, warm weather, fall is actually starting to grow on me with spooky movies, perfect running weather and pumpkin recipes! 

My first two cans of pumpkin this season yielded two recipes. Both delicious: one being a sweeter treat while the other had more cozy pumpkin flavors. 

I actually baked these bars twice because they were delicious but because they were so underbaked the first time and I couldn't figure out why. Upon the second baking, I realized it was because I completely ignored the directions to flip the pan and then bake for an additional 15 minutes. Whether gooey or properly baked through, these were delightful snickerdoodles in bar form!

I did bake this coffee cake properly and they were perfectly moist and flavorful. Compared to the snickerdoodle bars, this coffee cake is for those who aren't super into sweet treats. The flavor is more spice-filled, which packs a less sugary punch. These were easy to whip up one morning when I found myself being an early bird---a very rare occurrence!
