Now that summer is around the corner, I've been making salads and slaws on rotation lately. One of the recipes I keep going back to is from Carla Lalli Music's cookbook That Sounds So Good.
What makes this recipe a winner? It's super simple, garlicky, bright and crunchy. It comes together in no time and will brighten any picnic and/or potluck this summer.

Parmesan Cabbage Slaw adapted from Carla Lalli Music
Ingredients:
2 tbs red wine vinegar or lemon juice
1 tbs dijon mustard or whole grain mustard
1 garlic clove, grated
3 tbs extra virgin olive oil
salt and pepper
1 12oz package of coleslaw mix
3 oz parmesan cheese
Directions:
1. Mix the vinegar/lemon juice, mustard and extra virgin olive oil together in a large bowl. Season to taste with salt and pepper.
2. Add in coleslaw mix to the bowl and toss to coat.
3. Using a vegetable peeler, shave peels of parmesan cheese into the bowl over the slaw. Toss again and season with more salt and pepper to taste.
4. Enjoy!
