Unique Gluten-Free Baked Goodies

As someone who has loved ones who are gluten-free, I love to find different baked recipes that don't require too many unusual ingredients that I won't ever use again. (Although, almond flour doesn't fall into the category of an unusual ingredient).

Recently I found two very interesting and delicious gluten-free recipes---one is entirely sugar-free too! 

Savory Coffeecake with Roasted Tomatoes from Joy the Baker was a huge hit at a cake work party. I thought people might want a non-sweet version amongst many sweet treats so I was pleasantly surprised when a google search for "savory coffeecake" actually yielded a result! 
This is similar to cornbread and is sugar-free as well! Its sweetness comes from the roasted tomatoes. I had some trouble having the batter bake through underneath the tomatoes so I used foil not to overbrown the tomatoes. 

Flavorful and tasty. The only thing I might add next time is feta---it could use a salty punch from cheese. 

Chickpea Blondies (made famous from tiktok) were not the first time I made a dessert with beans but it has been over a decade since I have. I've been wanting to find new ways to add protein to my diet and less flour so these seemed like the perfect way to get a dessert fix while adding in some protein. 
These were simple but I did underbake them so they were fairly crumbly and not sturdy. But they tasted very similar to a regular blondie! I did get some bites that were a little chickpea forward but that didn't bother me (I assume things didn't blend so well). Delicious and definitely needs a repeat baking.
