Chocolate Chip Cookie Test No. 24: Bake Smart

For the first Chocolate Chip Cookie Test of 2026, I turned to one of my favorite recipe developers,  Samantha Seneviratne. I purchased her cookbook Bake Smart a little over a year ago but still haven't felt like I baked enough recipes out of it. 

The Recipe: Chewy Chocolate Chip Cookies from Bake Smart  (and I happened to find the recipe free online!). 
Recipe Notes: 
  • needs softened butter (so plan ahead!)
  • baking soda only
  • calls for dark brown sugar
  • suggests using chocolate discs because the quality and shape make these cookies shine
  • chill dough to develop a deeper flavor (overnight or up to 3 days)
Results: splurged on the chocolate discs but the amazon offering was only 250g instead of the 350g needed for the recipe so I ended up supplementing the recipe with some extra regular chocolate chips (but I made sure each cookie had a valrhona chocolate feve on top). With the high price tag on these cookies, the chocolate made the cookie! You could taste how complex the flavors were and the melted so beautifully into the nooks and crannies of the cookie. 

These were a tad too crunchy on the edges for me and if I baked them for a shorter amount of time, they were too underdone. They also didn't have salt sprinkled on top like I want on a ccc so I added some after they baked. 
Overall: Quite an expensive cookie but it an easy recipe to assemble. If I feel in the mood to treat myself with super high quality ingredients again, I may use the fancy chocolate but might try it in a different recipe that I love, like King Arthur Baking or Kenji's🍪🍪🍪
