Bananas for Bananas

March 8, 2016

My cupcake obsession started almost ten years ago when I bought my first muffin tin in grad school. This led to baking box mix funfetti cupcakes then to making dozens of cupcakes (from scratch) for friends anytime I was stressed out (which was pretty often). But then after entering the real world (away from schoolmates), I found it harder to pawn cupcakes onto people and so my cupcake baking dwindled over the years.

Birthdays are usually the only time I whip up some cupcakes now. With my friend's birthday a few weeks ago, I thought I would try my hand at making the flavor I order most at bakeries: banana cupcakes.
The best combination for banana cupcakes is topped with a cream cheese frosting. When sampling banana cupcakes, I look for a cupcake that is more sweet and cake-like rather than banana bread-y. I wasn't sure what the results would be but I hoped my cupcakes would meet my expectations.

This King Arthur Flour recipe yielded some delicious cupcakes that were more on the side of banana bread. Now I see a new project in the future to find the perfect banana cupcake recipe, but these cupcakes aren't a bad introduction to my recipe hunt.

On a side note: I finally got to christen my fortune cupcake liners I received for my birthday almost a year and a half ago.
