Thanksgiving Leftovers Cupcake

Googling "Thanksgiving Leftovers Cupcake" didn't yield too many results, so I thought I'd take it into my own hands to create some this year. If you still have some leftovers and a muffin tin, then you're ready to make some savory cupcakes.
I was inspired by The Meatloaf Bakery's savory cupcakes and made the cake into a leftover turkey loaf, mashed potatoes became the frosting and gravy/cranberry was an extra topper. The end result: pretty delicious.
Thanksgiving Leftovers Cupcake (makes 4 cupcakes)
Ingredients:
1/2 cup cooked turkey, chopped into small pieces
1/4 cup stuffing
2 tbs cornbread crumbs
2 tbs gravy
1 egg, lightly beaten.
4 tbs cooked mashed potatoes
Directions:
1. Preheat oven to 375 degrees. Combine turkey, stuffing, cornbread, gravy and egg together. Spoon batter into greased cupcake liners or a greased muffin tin.
2. Top each cupcake with one tablespoon (or more, if you desire) of mashed potatoes. Bake for 20 minutes or until heated through.
3. Top cupcake with cranberry sauce or more gravy. Enjoy!
