Seeing Green

A few months ago when I was visiting Sista Min in Grand Rapids, I spent one afternoon drooling over her King Arthur Flour Cookie Companion Book (which I actually bought for her!). My eye caught a few potentials, including this recipe for St. Pat's Pistachio Cookies.
Speaking of St. Patrick's Day, the closest I can say that I've felt a tinge of Irish pride was back in college when I lived with two Irish friends, McB and O'G. (Incidentally, they are now both married and didn't keep their Irish sounding last names). I followed them to the Chicago St. Patty's Day Parade Freshman year and felt totally out of place. But I guess who cares, I just enjoyed hanging out with my Irish buds.

Anyway these cookies are my way of bringing some Irishness into my very non-Irish life. They're festive, in that they're tinted with green from the Jello pudding mix. My favorite color is green so I don't see a green cookie being such a bad idea.

They're soft, nutty and not-too-sweet. Yum.

Would the ultimate pairing of green St. Paddy's Day treats be a shamrock shake with these cookies?

  • use this recipe from King Arthur Flour
  • when dropping the dough onto prepared pan, mold the cookies by hand. these cookies don't spread in the oven so make sure the tops are smooth and flat, if that's what you desire.
