He, being the good Boy Scout that he is, followed this recipe to a tee, fancy ingredients and all. Me, well I took some liberties. But in the end, I'd have to say both are good but his is better.
My version omitted shallots, dates, almonds and the long beautiful strips of shaved Parmesan (I actually got hold of the recipe AFTER I went grocery shopping). I subbed in red onion, craisins, toasted walnuts and the sprinkle form Parmesan cheese.
But regardless of the toppings, the base of the salad is what makes it so wonderful. Massaging the kale is the key! Literally rubbing the kale between your hands or tossing it in olive oil and letting it sit overnight wilts the kale, making it less tough, almost silky and pleasant to eat.
And since I love kale in its raw form, this is an easier way to consume this leafy green.
