Meatless Mondays: January

My New Year's resolution this year was to partake in Meatless Mondays (or at least one meat-free day a week). The movement started way back in 2003 but I only just jumped on the bandwagon---better late than never! 

I made two meatless dishes each Monday so here are my favorites from January's Meatless Mondays: 

Warm Farro Salad with Squash from The Kitchn was a bright and flavorful grain bowl that used a variety of ingredients: acorn squash, pecans, pomegranate seeds and feta.  

Lemony Brussels Sprouts Pasta from The Kitchn was a super easy dish to put together and even though it didn't many ingredients, its simplicity made it delicious. And can you really go wrong with pasta? 

Broccoli Open-Faced Cuban Sandwich was a sandwich inspired by a broccoli reuben I saw on this episode of One of Everything. I had been making Cuban Sandwiches after making this Cuban Sandwich Dip for New Year's Eve. I just replaced ham for roasted broccoli and it was just as enjoyable as the regular meat-filled one. 

Buffalo Cauliflower Tacos from The Edgy Veg was my favorite Meatless Monday meal all month. I used my air fryer for the cauliflower and didn't make it vegan so I added the slaw and yogurt sauce from this fish taco recipe (not sure what my logic was for using fish taco ingredients but it worked well!). 

Pupusas from The Kitchn was a fun project since I've had an obsession with them ever since I watched this video five years ago. They were a lot harder to assemble than I imagined but it was nice to try my hand at something new since I'm dining out much less often these days. (I added canned refried beans to this filling to add something more hearty).
