Super Bowl Treats

For this year's Super Bowl (go, Chiefs!), I had grand plans to make party food that represented both cities. KC vs. Philadelphia seemed easy enough to make some sort of bbq appetizer and something involving Philly cheesesteak flavors. 

Long story short, I got too into the Philly Cheesesteak idea that I decided it would be easier to make another Chiefs-colored dessert like I did in 2020 since baking is somehow the easier route for me. 

Raspberries and lemons easily lend themselves to the perfect color combo to represent the Chiefs. Although this recipe was for Cranberry Lemon Bars, frozen raspberries were a great substitute since cranberries are a little hard to find this time of year. 
The Recipe: Cranberry (or Raspberry) Lemon Bars from NY Times Cooking (but the recipe I linked isn't behind a paywall). The perfect tart/sweet combo is in these bars. I used slightly less sugar for the raspberry substitute since they're a little less tart than cranberries. 

As for the cheesesteak bites, they were a hit too. I used puff pastry in a mini cupcake tin with this recipe to make some super tasty bites. And the shortcut using deli roast beef really make this super easy to throw together.
