Christmas Cookies 2023

After I baked rugelach at the beginning of the month, I found myself baking a couple more times this holiday season, each time with a festively colored cookie, which will immediately get you in the holiday spirit. And if you’re assembling Christmas cookie tins, freeze cookie dough throughout the year and then bake when you’re ready for them to be added to your tins. I saved some chocolate chip cookies and the gochujang cookies (more on those below) to round out this holiday cookie collection. 



Neopolitan Amaretti Cookies from Love and Olive Oil are gluten-free treats that can be customized with matcha or pistachio to make these super festive. I opted for chocolate since I couldn’t resist the neopolitan flavors. I added food coloring to the dough but these didn’t come out nearly as vibrant as the original recipe posting. These were deliciously chewy and flavorful. 
 
Brown Butter and Pistachio Sablés from Bon Appetit are shortbread cookies that are so elegant looking. The dough was quite soft to work with so I kept putting the dough in the fridge. The diamonds were a little difficult to make free hand so I used my tree cookie cutter. Both look festive and are super tasty. 
Gochujang Caramelized Cookies from NY Times Cooking were part of NY Times 2022 holiday cookie list. The Korean chili paste, when caramelized, makes for a spicy yet sweet cookie. The ribbons of the chili paste create quite a festive and eye-catching cookie.
