This February, my kitchen was filled with Date Bark, a viral recipe that has its origins from 2023 but I only just learned about it recently. I first saw a video for it back in October but it took until a few weeks ago to finally make this simple treat: dates, nut butter and chocolate.
Since the fiance and I both love RX protein bars (especially the chocolate peanut butter ones, which are basically dates, peanut butter and chocolate chips), date bark seemed right up our alley and it's endlessly customizable! They are the perfect, little snack when we're craving something sweet but healthy.
Basic Template for Date Bark
- 9 pitted and split open dates flattened thinly between parchment paper by a rolling pin (I like to use 9 dates to make a nice square)
- Spread a layer of runny nut butter on top of flattened dates
- Melt half a 3.5oz dark chocolate bar in the microwave (in 30 second increments) and spread on top of nut butter layer
- Top with chopped nuts, flaky salt, crumbled freeze dried fruit, etc.
- Freeze for an hour, chop into bite-sized pieces and enjoy!
The Results: So far I've made peanut butter pistachio, banana bread date bark (FYI: it gets a little drippy from the mashed up bananas) and almond butter with freeze dried strawberries. All have been delicious but I prefer date bark with peanut butter filling.
