Since the Chiefs have been to five Super Bowl games in the last six years, I have been on the lookout for different red/yellow desserts to make for the big game. I didn't go too far outside the box this year after I bookmarked a canned cranberry lemon bar back in November (it was written as a Thanksgiving dessert).
These are very similar to the raspberry lemon bars I made a couple years ago for the Super Bowl. Since canned whole cranberries are used in this year's recipe, it seemed easier to assemble. But both lemon berry bars were vibrantly colored to showcase their Chiefs pride.
The Recipe: Lemon-Cranberry Bars from the Kitchn. These are easy to assemble but the bake time is a little on the long side as well as the cooling period--so make sure to make these the day before you plan on eating them.
To accompany the lemon-cranberry bars, I made a slow-cooker gumbo to celebrate the host city of the Super Bowl (New Orleans). Delicious and super easy to make with the slow-cooker. And the recipe came complete with a roux!
The Recipe: Easy Crockpot Gumbo from the schmidty wife. The roux is optional but I think necessary for a tasty gumbo.
