Happy National Cupcake Day (two days ago)! This year I was a little crunched for time before a holiday concert so I patronized a local lunch hotspot to grab my cupcake day cupcake this year. When I went to The Russell back in the spring, they had several flavors of cupcakes available in their dessert display but sadly there was only one cupcake available the other day: carrot. Each cupcake is $3.
Even though I had only one flavor to choose from, this was a super tasty one to have. It was pleasantly moist, not too sweet and topped with a delicious spice-filled frosting. I couldn't have asked for a better cupcake on this cupcake day, especially since my track record with cupcakes on cupcake day hasn't been stellar (2011, 2012, 2014, 2015, 2016 with the exception of a good one last year: 2017).
